      Well... It's all about Chemistry.  Mixing up the perfect combo of
    ingredients (we’ve taken care of that!), at the right temperature, for the right time (this is up to you) – always leads to something wonderful!

 constant heat is key to baking success (no more opening the oven 'just to peek'). Always put baking into a fully pre-heated oven & use a timer so you don't over bake.  Cakes are done when a fork inserted in the centre comes out clean; cookies when they are just brown at the edges, looking slightly underdone.

Most ovens run hot or cold (don’t trust your dial). Know your oven & adjust temp & time recommendos as needed.  Rotate the pan 3/4 way through bake time to ensure even baking.  For fan bake ovens always reduce temp & time (& watch closely). Remove all baking to a wire rack to cool, even while still in the tin.

The true sign of a homebaking is a small delicate cookie.

for evenly baked cookies  Place dough balls of equal size on a cool baking tray (dark pans absorb more heat & may burn the bottoms, so watch closely & use quality trays). The baking rack should be in the centre of the oven & preferably bake one pan at a time.

fully pre-heat your oven & know if it runs hot or cold -adjust temp & time recommendos as needed.  For fan bake ovens, always reduce temp & bake time (& watch closely).

bake them how you like them!  For 8 BIG cookies bake them for 1 or 2 extra minutes; for 32 dainty cookies 1 or 2 less. Always always always use a timer, but the real rule is colour.

colour  indicates cookie doneness. For chewy cookies, remove when edges are just brown & the centre looks under done.  If you like crispy cookies, remove when just brown all over.

After 2 minutes on the hot tray, move cookies to a wire rack to cool, not a plate.  You'll have a soft delicate cookie with a slight crunch.  Luxury.
